Ingredients

  • 150 g firm tofu — patted dry
  • 20 g plain protein powder — unflavoured or lightly sweetened
  • 80 g wholegrain bread — 2 small slices
  • 80 ml unsweetened soy milk — or other gentle plant milk
  • 10 g extra virgin olive oil — for drizzling
  • 2 g ground cinnamon
  • 1 g matcha powder
  • 10 g honey optional

Instructions

  1. In a small blender or food processor, add the firm tofu, plain protein powder, unsweetened soy milk, ground cinnamon, and matcha powder.
  2. Blend until completely smooth and creamy, scraping down the sides as needed; the mixture should be thick but spreadable. If too thick, add 10–15 ml more soy milk.
  3. Lightly toast the wholegrain bread slices until just crisp on the outside but still soft in the center to keep them easy to chew.
  4. Spread a generous layer of the cinnamon matcha tofu cream over each warm toast slice.
  5. Drizzle the toasts lightly with olive oil and, if using, a thin line of honey for extra calories and gentle sweetness.
  6. Slice each toast into small squares or fingers to make the portions feel less overwhelming and easier to nibble slowly.
