Ingredients

  • 150 g firm tofu — patted dry and crumbled
  • 20 g unflavoured protein powder — plain, unsweetened
  • 10 ml extra virgin olive oil — none
  • 30 ml water — room temperature
  • 1 g matcha powder — sifted if clumpy
  • 2 g dried italian herb mix — crushed between fingers
  • 1 g salt — fine
  • 80 g wholegrain bread — 2 thin slices, lightly toasted

Instructions

  1. In a small bowl, combine the crumbled tofu, unflavoured protein powder, olive oil, water, matcha powder, dried Italian herb mix, and salt.
  2. Using a fork or small masher, mash the mixture until it becomes a smooth, spreadable paste, adding an extra 5–10 ml water if needed to reach a soft, creamy consistency.
  3. Lightly toast the wholegrain bread slices just until warm and slightly firm but not very crisp, to keep them gentle on the stomach.
  4. Spread the matcha-herb tofu mixture evenly over the warm toast slices, then cut each slice into 4 small squares or fingers for easy, bite-sized portions.
  5. Serve immediately, starting with one or two pieces and pausing to check fullness before eating more.

Tips for GLP-1 users

If your appetite is very low, keep the toast slices thin and cut the bites small so you can take just a few easy mouthfuls while still getting a concentrated dose of protein and calories.
